This winter has been a cruel one. But one thing that always warms us up and lifts our spirits is homemade soup. Tom’s mom always has a pot at her house and sends us home with some whenever we visit. We always ask for her recipes, but they are in her head. One of these days I need to sit there, watch her, and write it down.
But one amazing soup she made was a minestrone. She got the recipe form her sister, who got it from someone. So we will call this Siostra’s Minestrone
It is so nice to have a big pot of homemade soup for the week, just waiting for you at lunch everyday.
1 onion chopped
3 carrots chopped
3 celery stalks chopped
1 can 28 oz chopped tomatoes
5 cups of chicken broth
2 bay leaves
2 cups of cooked chicken – (2 breasts)
15 oz can of cannelloni beans drained and rinsed
1/2 tsp of salt
1/2 tsp of pepper
1/4 cup of parsley
1/3 cup of grated parmesan cheese
*optional: red pepper flakes and pasta (orzo) and kale
Saute onion, carrots, and celery in olive oil for 5 minutes. Add chicken broth, tomatoes, bay leaf, and simmer for 20 minutes covered. After 20 minutes uncover, discard bay leaf. Cut up chicken in small pieces and sauté in butter for 10 minutes. Add rest of ingredients and cook for at least ten more minutes. Maybe add some red pepper flakes to give it a little kick.
Gina’s notes: I didn’t add chicken since most of our meals this week are chicken based, so I didn’t want to over due it. I added a LITTLE red pepper flakes. Too many and the kids won’t touch it. I also cook orzo on the side and keep it separate. That way we can add as much or little as we like to each serving. I also added kale!
Even though I am writing this to share with you, the real selfish reason is for me to keep my Pinterest organized, lol! I know for a while I was doing good on our food blog, but I just can not keep up with posting on another site. So I figured I might as well post them here, pin them, and then I can find my fav recipes later on my ORGANIZED Pinterst board.
We all have our “yum” or “food” or “recipe” Pin board with 500 billion recipes on it right? Well with Tom and I meal planning and putting a halt to ALL fast food as much as we can, I decided I need to use Pinterest to may advantage. My mom always made notes in her cook books to remember what recipes she like and the ones she did not. Now that Pinterest is pretty much our recipe box, I made a few new boards.

Oh, yeah…did I mention our new obsession? The Nutri Bullet. We have a shake every day. I love that the kids are getting a mad amount of nutrients and enjoying it. They like to draw me pictures of the recipes they want to make. A big secret ingredient (besides the kale and spinach) Stonyfield Organic Chocolate Underground yogurt. This stuff is the bomb. It adds chocolate and creaminess, which helps mask anything else I am sneaking in there.
We have been super happy with how well we have been eating and planning. I have taken a page out of my friend’s Erin and Paula’s books and started really researching what is in our food. I won’t get preachy here, but if you are interested spend some time on Food Babe’s blog. We have said good bye to fast food as much as we can, we read the back of our food boxes and know what to look for, and will not replace our microwave that has been broke anyway for two years.
